How to make chocolate in India? Recipes for making chocolates

Chocolates, new found interest. I am learning to make chocolates and will be updating this post from time to time.

I tried making the following recipes-

Dark chocolate with jaggery (list of ingredients and its proportion)-

  1. Cocoa powder
  2. Ghee
  3. Jaggery powder

Milk chocolate with cocoa powder and icing sugar (list of ingredients and its proportion)-

  1. Cocoa Powder
  2. Ghee
  3. Jaggery powder
  4. Milk powder

Chocolate with cocoa powder, icing sugar in groundnut oil (list of ingredients and its proportion)-

  1. Cocoa Powder
  2. Groundnut oil
  3. Icing sugar

Dark chocolate with jaggery in Amul Unsalted Butter (list of ingredients and its proportion)-

  1. Cocoa powder
  2. Jaggery
  3. Unsalted Butter (Amul Brand)
  4. Cashew, walnut, raisins and peanuts.

Dark chocolate with cocoa nibs, jaggery and cocoa butter. Recipe date- 26/11/2021

  1. Cocoa nibs- 500grams
  2. Cocoa butter- 190grams
  3. Powdered jaggery- 310grams

Total batch size- 1000grams

69%😜 dark chocolate recipe, added some dry fruits to taste.

I forgot the date for this, but it was a disaster-

Read it carefully so as to not repeat my mistake. This is the recipe I tried-

Cocoa powder- 1KG

Powdered jaggery- 1KG

Unsalted butter- 1.5KG

I melted the butter and mixed in cocoa powder little by little after it was mixed in properly I proceeded to add the molten (not melted :)) powdered jaggery as I had to heat it on low temperature for a long period of time and keep mixing it. I added the some nuts in the tray and topped it up with the disgusting mix ;). I refrigerated, I don’t have the monies to throw it out so I am eating a pcs or two everyday and distributing it to people I meet, so as to finish it off and experiment a new recipe. If someone screw you in the past and you want to take a revenge share this recipe.

Cocoa nibs- 500g

Sugar- 500g

Cocoa butter- 150g

Total batch size- 1150. It is going to be a 56.5% dark chocolate.
